For this Bran Muffin Recipe, you will need first 1 1/2 cup of unprocessed wheat bran mixed with 1/2 cup of boiling water to moisten the bran. Mix everything together and set aside. After this, combine the wet ingredients namely: 3/4 cups of buttermilk and 3/4 cups of regular milk. Give this a good stir.

In making this sumptuous dessert, you will need to preheat your oven to 350 degrees Fahrenheit and prepare your Loaf pan sprayed with grease or painted with light butter. Put that aside and also have these ingredients: For the yougurt and banana mixture you need 2 large ripe bananas, preferably those nearing brown colored ones with a lot black spots so that it is sweet and has more flavor in them,1 tsp. of baking soda, and 1/2 cup of low fat plain yogurt (you can also use greek yogurt). For the wet ingredients you will need: 1 large egg or to make it healthier you can use 2 large egg whites, 3/4 cups of light brown sugar, 1/4 cup flavorless oil (you can use canola, vegetable, or light olive oil), and 1 tsp pure vanilla extract. On the other hand, for the dry ingredients you will need: 1 cup all purpose flour, 1/2 cup of whole wheat flour, 1 tsp of baking powder, 1/4 tsp of salt, and an optional 1/2 tsp of cinnamon for that good aroma and better taste. You can also add 1/2 cup of chopped nuts or for a twist you can add dark chocolate chips (the 70% cocoa ones are healthier).

Procedure

To start, combine the ingredients for the yogurt mixture. In a medium bowl add the 2 large bananas, peeled and mash them with the use of your fork. Using a spatula, combine the two thoroughly. After this, Add this mixture (yogurt mixture and wet mixture) to the dry mixture. Mix it with the use of the spatula. You do not need to use a blender or mixer for this. After this, you can pour the mixture to your prepared loaf pan and pop it to the preheated oven for around 45 to 55 minutes or until the loaf is golden brown and passes the toothpick test.

If the loaf is ready and cooked, bring it out of the oven (make sure to use your mittens!) then leave it to cool in a cooling rack for about 10 minutes. After this, take a flat edged utensil or a knife and run it to the side so as to ascertain that the loaf is loose. Transfer the loaf to your rack or serving plate either sliced or whole.
